1 TBL oil
1 C chopped onion
1 bag frozen broccoli florets
1 32 oz. carton chicken broth
1 bay leaf
1/8 tsp pepper
1/8 tsp red pepper flakes
Salt if needed
1 C milk

Garnish options
Croutons or crushed tortilla chips
Shredded cheese
Snipped fresh herbs

Directions:
Directions:
Sauté onion in oil until tender but not browned.
Add remaining ingredients except milk

Bring to boil and simmer about 30 minutes until broccoli is tender.

Using an immersion blender, purée until smooth, or purée in batches in blender or food processor.
Return to pot and taste for seasoning. Add salt if needed.
Add milk and reheat.

Simple. Can sub asparagus, cauliflower, spinach, etc. for broccoli.
