2 lbs Beef roast, cut into 1 inch cubes
2 c. Broth, chicken or beef Or water with tomato bullion
1/2 tsp Onion Powder
2 Garlic cloves minced Or 1 tsp garlic powder
1 tsp. Salt1/2 tsp pepper
Caribe Sauce recipe (blended crushed Chile with seasonings.)

(Same meat as Chile Colorado recipe)

Cut roast into 1” pieces, add seasoning (Salt, onion powder, and garlic) to meat. Sauté in 2 Tbsp oil in covered pan until natural juices come out. Add 1/2 cup water, cover and simmer on medium heat for 1 hour, keep checking it does not dry out. Don’t add more than 1/2 cup water at a time. This concentrates the flavor.

When meat is tender, add Caribe Sauce recipe to meat. Simmer and cook 15 minutes.

Add water if too thick, but this recipe makes a thick rich sauce.

This version is great for those who are gluten intolerant. Just make sure Caribe sauce doesn’t have any ingredients that bother you. You can substitute grated tomato pulp and chicken broth for the water And tomato bullion granules.
