2 c flour
2 tsp sigar
½ tsp salt
⅔ c shortening
1 T white vinegar
4-5 T 2% milk

Filling
1 8oz pkg cream cheese softened
¾ c confectioners' sugar
2 tsp grated lemon peel (opt)
½tsp lemon extract

Topping
6c fresh strawberries(works with blueberries or peaches)
¾ c sugar
1T cornstarch
¼ tsp salt
1 c water
1 3oz pkg strawberry gelatin
1 tsp butterº

Directions:
In a large bowl mix glour, sugar and salt. cut in sortening until crumbly. Gradually add vinegar and milk, tossing with a fork until dough holds together when pressed. Shape into a disk, cover and refrigerate one hour.On a lightly floured surface roll dough to a ⅛ inch thick circle and transfer to 9" pie plate. Trim pastry around rim of plate. Refigerate 30 minutes. Line pastry with double thickness of foil filled with pie weight or dried beans. Bake on a lower oven rake 425º 20-25 minutes. Remove foil and bake 3-6 minutes longer. Cool
In bowl beat cream cheese, sugar, lemon peel and extract. spread carefuuly into crust. Refrigerate while preparing topping.
Place strawberries in large bowl. In small saucepan ,mix sugar,cornstarch, salt and water until blended; bring to a boil over medilum heat stirring constantly. Cook and stir 1-2 min or until thickened and clear. Remove from heat and stir in gelatin until dissolved. Stir in butter. Pour over strawberries tossing gently to cover. arrange over filling. Refrigerate to set up.
