4 fresh or frozen (thawed) chunks pineapple
4 large fresh mint leaves
1.5 ounces lightly aged rum (like Plantation 3 star or El Dorado 3 year)
1/2 ounce peach liquor (better with a liquor than a schnapps)
1/2 ounce demerara syrup (recipe below)
1 ounce lime juice
1/2 ounce pineapple juice

For the demerara syrup:
1 cup demerara sugar
3 cups granulated white sugar
2 cups water

Muddle the pineapple and mint in a pint size or larger glass. Add liquids. Fill a rocks glass with ice and add to mixing glass. Stir to combine, about 30 seconds. Pour into rocks glass.

For the demerara syrup:

Bring water to a boil in a sauce pan over high heat. Add demerara and stir vigorously with a whisk until dissolved, about 1 minute. Add granulated sugar and stir vigorously until dissolved, about 1 minute. Remove from heat and let cool. Store in a sealed container in the refrigerator; will keep for several weeks.
