3c. bread flour or all purpose flour ( aerate flour before measuring)
2 t. yeast (instant or Rapid Rise)
1 t. salt
1 1/2 c. hot water
2T. extra flour for shaping

Directions:
Directions:
1. Combine flour, 2 t. yeast, and salt in a large bowl. Stir in water until it's well combined.
2. Cover with plastic wrap and let stand at room temperature for 1 hour.
3. After 40 minutes, place 3 - 6 quart oven with a lid in a cold oven and preheat to 450 degrees. (I use a 4 quart casserole pan that has a lid)
4. After dough has rested for the hour, place on large piece of parchment paper ( large enough to be placed in your pan) and flour the paper generously. Using a rubber scraper, fold the dough over 10 -12 times and shape into a ball. Add more flour if the dough is sticky.
5. Place paper and dough into a bowl and cover with a towel. Let stand on the counter top for 15 minutes.
6. After 15 minutes, carefully lift the paper and dough into the hot pot. ( the dough sits inside the parchment "basket" inside the pot) Cover and bake for 30 minutes.
7. After 30 minutes, remove lid and parchment paper. Place the bread, uncovered, into the oven and bake for 10-15 more minutes. Let it cool at least 15 minutes before slicing.
