¼ c. olive oil
1 yellow onion, chopped
6 garlic cloves, chopped
2-3 c. cooked chicken, coarsely chopped
3½ T. chili powder
2 T. tomato paste
1 T. ground cumin
1 T. dried oregano
2 15-ounce cans white beans, drained, liquid reserved
2 14½-ounce cans diced tomatoes in juice
½ c. chopped fresh cilantro

Heat oil in a large pot over medium-high heat. Add onion, bell pepper, and garlic; sauté 5 minutes. Add chicken. Sprinkle with salt and pepper and sauté 5 minutes longer. Mix in next 6 ingredients, including 1 cup reserved bean liquid; bring to boil. Reduce heat and simmer for about 30 minutes, stirring occasionally. If chili is too thick, add more bean liquid by the tablespoon or add a bit of water. Season to taste with salt and pepper. Mix in cilantro.
