1¼ c. coarsely chopped fresh cilantro
¾ c. olive oil
5 T. fresh lime juice
2½ tsp. ground cumin
1¼ tsp. ancho chili powder
6 skinless, boneless chicken breast halves
3 large poblano chilis, halved, seeded, cut into ¾-inch-wide strips
3 large yellow bell peppers, cut into ¾-inch-wide strips
2 red onions, peeled, sliced into ½-inch-rounds
12 8-inch diameter flour tortillas
salsas, guacamole, sour cream (optional)

Puree first 5 ingredients in a food processor. Season marinade to taste with salt and pepper.

Place chicken in a large ziplock bag and sprinkle with salt and pepper. Pour ⅓ cup marinade over; seal bag and turn to coat.

Place poblanos, peppers, and onions in a large ziplock bag and sprinkle with salt and pepper. Pour ½ cup marinade over; seal bag and turn to coat.

Reserve remaining marinade as a condiment for the fajitas.

Let chicken and veggies marinate for at least an hour.

Grill chicken over medium heat until cooked through. Grill vegetables until tender, turning frequently. Grill tortillas until charred, about 1 minute per side. Slice chicken crosswise into strips.

Fill tortillas with chicken and vegetables; drizzle with reserved marinade. Serve with salsa, guacamole, and sour cream.

These are our favorite summer fajitas and are a real crowd pleaser! Great when served with a mexican corn salad, as that can be used as a condiment as well. Enjoy!
