Ingredients: 4 T fresh lime juice 1/2 t chili oil, or to taste 1 t ground cumin salt and pepper 4-6 mahimahi filets about 2 c chopped mangoes (from 2 large fresh or frozen, thawed and drained) 1/3 c scallions (opt.) 1 small fresh green chili, seeded and chopped 1/4 c finely chopped fresh coriander

Directions:Mix half the lime juice with the chili oil and cumin. Season to taste with salt and pepper. Place fish in a glass or ceramic dish and rub lime juice mixture on both sides. Cover and allow to marinate in the refrigerator for two hours.
Meanwhile, peel mangoes and dice. Mix the mango with the remaining 2 T lime juice, the scallions, chili and coriander. Set aside at room temperature.
Heat a grill or broiler to very hot. You can grill the fish as a whole filet or after cutting into pieces. Grill for about 5 minutes on each side. Serve with salsa. |
