Salad:
Green lettuce of your choice (I like to mix red and green left together)
2 medium peaches, sliced
2 cups fresh strawberries, sliced
1 can (11 ounces) mandarin oranges, drained
bacon, crumbled
shaved or shredded Parmesan cheese

Grilled Peach Vinaigrette:
6 small ripe peaches, halved, pitted
2 tablespoons olive oil
2 (5.5-ounce) cans peach or apricot nectar
1 shallot, chopped
¼ cup champagne vinegar
¾ teaspoon salt
½ teaspoon white pepper
½ cup extra-light olive oil

For Vinaigrette:
Spray grill rack with nonflammable cooking spray. Preheat grill to medium-high heat (350° to 400°).
In a medium bowl, combine peaches and olive oil, tossing to coat. Grill peach halves, covered with grill lid, for 1 to 2 minutes per side or until golden.

In the container of a blender, combine peaches, peach nectar, shallot, vinegar, salt, and pepper. Blend until smooth. With blender running, gradually add olive oil in a slow steady stream.

Add Peach Vinaigrette to the salad and toss before serving.
