1 cup sweet potato purée
1/2 cup ricotta
1 teaspoon lemon zest
1/2 teaspoon sugar
1/2 teaspoon salt
a pinch of nutmeg
1 recipe for pierogi dough
Sage Brown Butter

Directions:
Directions:
Combine the filling ingredients. Make the dough, roll out and fill. Serve with Sage Brown Butter.

Sage Brown Butter
Melt 1/4 cup butter in a small sauce pan on medium heat. Continue cooking, swirling occasionally, until light golden brown. Remove from heat and stir in 8 sage leaves (finely chopped) and 2 teaspoons of lemon juice.
