3 cans diced tomatoes
1 cup finely chopped carrots
¾ cup finely chopped yellow onion
1 14-oz can of chicken broth
1 tbsp. sugar
2 tsp. salt
3 tbsp. butter
3 tbsp. flour
1 cup whole milk
2 tsp. basil
½ tsp. pepper
½ tsp. celery salt
¼ tsp. garlic powder

Directions:
In a large pot over medium-high heat, add chicken broth, tomatoes, carrots and onions and bring to a boil. Reduce heat to medium-low, add sugar and salt and simmer, covered, for approx. 30 min.
In a medium saucepan, melt butter and then whisk in flour, stirring until thick. Slowly add the milk and continue to blend until smooth and thickened, approx. 5 min.
Add mixture to stockpot and season with basil, celery salt, pepper and garlic powder. Simmer on low heat to reduce and thicken, approx. 1 hour.

I must admit I am a tomato soup junkie - especially when paired with a crispy, melty grilled cheese sandwich. It is the ultimate comfort food and harkens to much simpler times.
