This makes a small amount. I ALWAYS DOUBLE IT when serving to a group.

1 small pkg frozen chopped spinach (thawed and drained)
4 Hard boiled eggs ( refrigerate until cold then slice)
1 cup milk
½ teaspoon salt and pepper
1 Tablespoon butter
1 Tablespoon corn starch or flour
Small box of Velveeta cheese. Need about a 4 inch chunk of cheese.

Spread thawed and drained spinach in bottom of crock pot
Spread sliced eggs over the spinach

Make sauce with all other ingredients. Cook in pan on stove, medium heat, until thick and all cheese has melted. Stir continuously.

Pour sauce over spinach and eggs.
Warm on medium for thirty minutes, then set to warm until ready to serve. Stir occasionally.
