Ingredients: 4 Chicken Breast (pounded thinly to ¼ inch thickness) Garlic – 3 Cloves or 1 ½ Tbsp. Minced Garlic (jarred works fine) Shallots – 1 Tbsp. Capers – 1 Tbsp. Lemons – 4 Thin slices and 1 wedge for Juice Flour Olive Oil – 3 Tbsp. Cayenne Pepper – Dash to taste Salt – to taste Butter – ½ Cube White Wine 1 ½ cups Chardonnay

Directions:Season Chicken on both sides with Salt and Dash of Cayenne Pepper Heat Olive Oil in Sauté Pan Lightly coat both sides of chicken in flour Place Chicken in pan and brown on one side only After browned on one side – Flip chicken over and add: Butter, Garlic, Capers, Shallots and Squeeze wedge of lemon Cook until Garlic gets refined (about 1 ½ minutes on Medium/High heat) Throw in 4 lemon slices Add White Wine and cook about 4 minutes covered on Medium/Low heat until sauce reduces slightly – sauce will tighten Remove Chicken and pour all sauce over chicken and serve. |
