5 pounds chicken wings, backs, necks, etc.
4 quarts cold water
2 quarts ice cubes
8 oz. Carrots, diced
8 oz. Leeks, diced
8 oz. Onions, diced
1 bay leaf

Directions:
Directions:
Thoroughly rinse chicken parts. Place in pot, cover with cold water. Bring to simmer, skimming any unclear stuff floating to surface. Add ice-- this will congeal the fat and make it rise to the top. Skim off the fat.

Add carrots, leeks, onions, bat leaf. Simmer 40 minutes-- continue to skim.

Turn off heat and let rest 10 minutes. Ladle stock out of pot and pass through fine meshed strainer. Discard cloudy liquid at bottom of pot.

Rinse fine meshed strainer immediately.
