9 inch, 2 crust

1 1/2 cups of sugar
4 tablespoons of sifted cornstarch
3/4 cup juice from cherries
3 cups canned pitted tart red cherries (water pack) (2 cans)
1 tablespoon of butter
1 1/4 teaspoon of almond extract

Directions:
Directions:
Preheat oven to 400 degrees.

Combine 3/4 cups of sugar with 4 tablespoon of sifted cornstarch. Stir in 3/4 cup of cherry juice. Cook over medium heat, stirring until mixture thickens and bubbles; cook 1 minute longer. Add remaining sugar, 3 cups of canned pitted tart red cherries, and 1 tablespoon of butter. (mixture will be thick)

Let stand while preparing pastry. Line pie plate with pastry; fill, adjust top crust, cutting slits for steam to escape.

Bake for 55 minutes.
