1 c. plus 1 tbsp. sugar
2 ½ heaping tbsp. corn starch
2 eggs, separated
½ c. lemon juice
2 c. hot water
rind from 2 lemons
¼ c. sugar
¼ tsp. cream of tartar

Directions:
Directions:
Cook first 6 ingredients on medium heat until thick. Pour into a baked pie crust and cool. Whip 2 egg whites with ¼ cup sugar and ¼ teaspoon cream of tartar until stiff peaks form. Spoon on top of cooled pie and bake for 5 minutes at 400ºF for 5 minutes or until golden. Cool before serving.
