9" baked pie crust
¾ c. brown sugar
⅓ c. flour
¼ tsp. salt
2 c. milk
4 eggs, separated
3 tbsp. butter
2 tsp vanilla

Directions:
Directions:
In a 2 quart saucepan, mix sugar, flour and salt. Beat four egg yolks into milk and stir mixture into sugar mixture. Over medium heat, cook mixture, stirring constantly, until very thick. Mixture should mound when dropped from a spoon. Remove from heat and stir in butter and vanilla. Set aside. Beat four egg whites at high speed, adding ½ cup sugar, 2 tablespoons at a time, until whites are stiff and glossy. Pour butterscotch mixture into baked pie crust and top with meringue. Spread meringue with back of a spoon; seal to the pie crust around all edges. Swirl up points to make attractive. Bake at 400ºF for 10 minutes or until golden. Cool and then chill in refrigerator.
