2 cup flour
½ cup confectioner’s sugar
2 sticks margarine or butter, cold and cut into small pieces

4 eggs
2 cup sugar
1/3 cup lemon juice
¼ cup flour
½ teaspoon baking powder
1 tablespoon grated fresh lemon peel

Directions:
Directions:
In a food processor combine flour and confectioner’s sugar and pulse. Add margarine and pulse until crumbly. Spray 9x13 pan with Pam, then press the crumbled dough evenly into the pan. Bake at 350 degrees for 15-20 minutes.

In the same processor bowl, combine the sugar and lemon peel, then add the remaining ingredients and process until smooth. Pour over baked crust and bake another 25 minutes.

Sprinkle with additional confectioner’s sugar right after you remove them from the oven. Cool slightly and then put in freezer for a short while before cutting or refrigerate until ready to cut into bars.

Before serving sprinkle with more confectioner’s sugar.

Yield: 48 small bars
