Ingredients:
Ingredients:
2 lbs ground beef
1 can cream mushroom soup
1 can cream chicken soup
1 can enchilada sauce
1 small can of chopped chili peppers (optional, Mom adds to make saucier)
12 corn tortillas
Grated cheddar or Monterey Jack cheese, or a combination

Directions:
Directions:
Brown ground beef and drain. Add all canned items and stir well. In a 11x13 baking pan, layer tortillas, mixture, cheese, until all mixture has been used. I put a little mixture on the bottom to keep the tortillas from sticking to the pan. Bake in a 350-degree oven for about 30 minutes.

Personal Notes:
Personal Notes:
We got this recipe from a neighbor, when I was little, and we were stationed (USMC Dad) at Camp Lejeune.

It is an easy dish and tastes kind of like enchiladas. It is now a Christmas Eve tradition in our house. It's so good, we must double it! Sometimes I even add corn. I usually serve with corn chips and/or corn pudding.
