5-6 center cut pork chops (1/2” thick)
1-1/2 cup uncooked long grain rice
1 can (8 oz.) tomato sauce
2 teaspoons taco seasoning mix (or more)
1 can tomato soup
1/4 cup spaghetti sauce (if I have some leftover)
1 medium green pepper, chopped thin
1/4 cup sharp shredded cheddar cheese or more
2 tablespoon canola oil
2 cups of water
Salt/pepper to taste

Directions:
Directions:
1. In a large skillet, brown pork chops in oil, drain the pork chops and season with salt and pepper.

2. Meanwhile, in a greased 13x9x2 inch pan, combine the rice, water, tomato sauce and taco seasoning and mix well.

3. Arrange the chops over the rice, then top with finely chopped green pepper.

4. Cover with aluminum foil and bake at 350 degrees for an hour.

5. Uncover the foil, sprinkle with cheddar cheese, return the pan to the oven and bake until the cheese is melted.

Yield: 4-6 people

On certain occasions, I have chopped the pork chops into bite sized portions,and served it at potluck events.
