Ingredients:  
4 oz. diced raw potatoes, sweet potatoes or hash browns
1 cup sliced shredded carrots
1 cup shredded zucchini
1/2 cup thinly sliced celery
1/2 cup diced onion
2 crushed clove garlic
1 3/4 cup chicken broth
1 can evaporated skim milk
3 1/2 oz shredded cheese, taco cheese or cheese of your choice
2 tablespoon flour
dash of salt
dash of pepper

Directions:
Directions:
Cook vegetables in broth until tender. Mix flour and milk in a jar to blend. Mix with vegetables, stirring until thickened. Continue to stir and add cheese, salt and pepper.

Optional: 1 cup cooked chicken chopped. Soup doubles well.
