2 tbs safflower oil
1 garlic clove
1 small lemon, juiced
1 fist sized beet
1 bunch of watercress, chopped
1 diced scallion
1 fistful of parsley
1/4 cup sunflower seeds, toasted
1 tsp currants (very important)

Directions:
Directions:
1. In a large bowl place oil, small crushed garlic clove and lemon juice. Mix well.

2. Into bowl, medium coarse on box grater, grate beet. Stir in green onions watercress, parsley. Toast sunflower seeds and add to bowl and toss again.
