2 tbs safflower oil
1 garlic clove
1 small lemon, juiced
1 fist sized beet
1 bunch of watercress, chopped
1 diced scallion
1 fistful of parsley
¼ cup sunflower seeds, toasted
1 tsp currants (very important)

Directions:
Directions:
1. In a large bowl place oil, small crushed garlic clove and lemon juice. Mix well.

2. Grate beet into bowl, using the medium coarse side of a box grater, Stir in green onions, watercress and parsley. Most important, lightly toast sunflower seeds in small frying pan. Add hot immediately to salad bowl and toss again.
