4 large potatoes
1/3 stick butter, extra melted butter for phyllo leaves
1 egg, if desired
4 onions
Salt, pepper, paprika to taste
Phyllo leaves, defrosted.

Directions:
Directions:
Saute onions until brown. Boil potatoes , and when soft, mash with butter and seasonings. Add onions. Salt to taste.

Take two phyllo leaves together, covering remainder with a damp towel, and lay out on another damp towel. Spread melted butter immediately on the two leaves. Take some of the potato and spread cross- wise onto the leaves. Roll up the leaves from the short side spreading melted butter on the leaves as you go.

Put on baking sheet.

Repeat with the remainder of the potato.

Slash the top of the rolled up leaves in various places of the phyllo dough and bake at 350 until brown and crisp on top.
