2 shallots, chopped
½ medium onion, chopped
1 clove garlic, minced
2 lbs butternut squash, peeled and cubed
5-6 cups chicken stock
¼ cup heavy cream
3 Tbsp butter
1/8 tsp nutmeg
salt & pepper to taste

Cut squash into 1-inch chunks (or purchase pre-cut). In large pot, melt butter. Add onion, shallots, and garlic. Cook until translucent, about 8 minutes. Add squash and stock. Bring to a simmer and cook until squash is tender, about 15 to 20 minutes. Turn off heat. Blend mixture with an immersion blender until smooth. (Optional: Remove squash chunks with slotted spoon and place in a blender and puree. Return blended squash to pot.) Stir and season with nutmeg, salt, and pepper. Turn heat back on low-medium and stir in cream. Let soup warm for 3-5 minutes, stirring regularly. Serve warm.
