2 tbsp. olive oil
1/4 cup panko
1/2 cup shredded parmesan
3 tbsp. butter
3 garlic cloves
1 shallot, diced
3 tbsp. flour
2 tsp fresh thyme leaves, chopped
1 1/2 cups milk
1/2 cup cream (I used half and half)
1 tsp Dijon mustard
salt and pepper to taste
1 cup shredded mozzarella cheese

Directions:

Combine olive oil, panko, and 1/4 cup parmesan. Set aside. Steam cauliflower until crisp tender. Melt butter in skillet. Add garlic and shallots and cook about 2 minutes. Whisk in flour and thyme till lightly browned. Gradually whisk in milk, cream, and dijon. Cook, whisking constantly, till slightly thickened about 4-5 minutes. Stir in cauliflower, ramaining parmesan, mozzarella. Put in baking dish (or if using oven safe skillet you can keep it in the skillet) Sprinkle with panko mix. Bake 20-25 minutes at 400 degrees.
