2 Cups Shredded Potatoes (thawed shredded hashbrowns)
4 Tbsp. Flour
1 Tbsp. Salt
1 Tsp. Pepper
1//4 Cup Onion, finely chopped
8 Jalepeno slices finely chopped
1 Bacon strip chopped
1 Egg
1 Cup Shredded Cheese

Directions:
Directions:
Thaw shredded potatoes and pat dry. Fry onion and bacon then cool.
Combine flour, salt, egg, pepper, onion, jalepeno, cheese and bacon to potatoes and mix. Should be sticky when mixed.
If not sticky add a little more flour. Put in freezer 1 hour to harden.
Fry in 350º oil (Crisco shortening) in skillet.
Cook 4-5 minutes or until both sides are crispy brown.
Transfer to plate lined with paper towel.
Sprinkle with salt.
Dip in spicy ketchup and enjoy.
