1 cup flour
1/2 tsp salt
2 tsp sugar
2 tsp baking powder
1 cup milk
1 egg
1 tsp vanilla
2 tsp oil
butter for pan

Directions:
Directions:
Mix together dry ingredients.
Mix together wet ingredients.
Mix dry gradually into wet, stirring well.
Let mixture stand for 5 or 6 minutes.

Preheat frying pan on medium low. When hot, add butter to pan.
Pour 1/4 of the batter into the pan and allow to cook until bubbles start to form on the top of the batter.
Flip and continue to cook...it will take less time to cook the flipped side so watch carefully to avoid burning!

Makes 4 good sized pancakes.

It's really important to preheat the fry pan to it's optimum temperature. Otherwise the temptation is to up the heat after starting the first pancake which can lead to too dark a result on the 3rd and 4th pancake!
