1 1/2 c. Granulated Sugar
1 c. Vegetable Oil
3 Eggs
2 c. Flour
2 tsp. Cinnamon
1 tsp. Baking Soda
1 tsp. Vanilla
1/2 tsp. Salt
3 c. Shredded Carrots
1. c. Chopped Walnuts
1 c. Raisins

Frosting
1. pkg. Cream Cheese (8 Oz.) Softened
1/4 c. Butter (softened)
2-3 tsp. Milk
1 tsp. Vanilla
4 c. Powdered Sugar

Heat oven to 350F. Grease bottom and sides of one 13x9 inch pan or 2 8-inch round pans with shortening, lightly flour. In large bowl, beat granulated sugar, oil, and eggs with electric mixer on low speed about 30 seconds until blended. Add flour, cinnamon, baking soda, 1tsp. vanilla, and salt. Beat on low speed for 1 minute. Stir in carrots, nuts, and raisins. Pour into pans.

Bake 13x9 inch pan 40-45 minutes, round pans 30-35 minutes, or until toothpick inserted into center comes out clean. Cool completely, about an hour.

In large bowl, beat cream cheese, butter, milk, and vanilla with electric mixer on low speed until smooth. Gradually beat in powdered sugar , 1 cup at a time, until smooth and spreadable.

I always mix in a few pinches of nutmeg to my frosting, it adds extra flavor to the frosting.
