1 RECIPE:

5 Lemons, peel only (be sure to wash and dry your lemons before peeling).
1 1/4 C pure grain alcohol (Everclear can be purchased at a large-box liquor store).
Glass Jar with seal
3 C water
1 1/4 C sugar

NOTE: Do not use Vodka. It alters the flavor.

1. Using a veggie peeler, peel the skin off each lemon in long strips, making sure to only peel the skin and not peel into the white pith of the lemon.

2. Place the strips into the glass jar and add the alcohol.

3. Mix together and seal shut. Label your jar with date made.

4. Store in a dark, cool/cold place, for at least 30-days.

5. After 30-days, continue with making the sugar-water. Add water into a pot and bring to a boil.

6. Once boiling, add sugar and heat over medium/low heat until sugar has completely melted into the water.

7. Remove from heat and set aside to completely cool.

8. Once sugar water is cooled, strain the lemon alcohol into the sugar water and discard the peels.

9. Mix together to make Limoncello. Transfer into a bottle with a stopper and store in refrigerator or freezer.

10. Serve Limoncello in chilled glasses and enjoy.
