24 oz frozen shredded potatoes/hash browns
salt and pepper
12 eggs
2 cups half and half'1 tsp salt
1-1/2 cups cheddar cheese, shredded
1-1/2 cups jack cheese, grated
2 cups chopped ham or sliced breakfast sausage

Directions:

1. Grease a 13"x9" baking pan. Place the frozen hash browns on the bottom of the pan. Sprinkle with salt and pepper,

2. In a large bowl, whisk eggs together. Then add half and half, season set, cheddar cheese pepper jack and chopped ham or sausage.

3. Pour over the top of the frozen potatoes. Cover with foil and refrigerate 2 hours or overnight.

4. Bake covered in foil in oven heated to 350F for 90 minutes. Let rest for 10 minutes before serving.
