24 oz frozen shredded potatoes/hash browns
salt and pepper
12 eggs
2 cups half and half
1 tsp salt
1½ cups cheddar cheese, shredded
1½ cups jack cheese, grated
2 cups ham, chopped or sliced breakfast sausage

Directions:
Directions:
1. Grease a 13"x9" baking pan. Place the frozen hash browns on the bottom of the pan. Sprinkle with salt and pepper,

2. In a large bowl, whisk eggs together. Mix in half and half, salt, cheeses, then add chopped ham or sausage.

3. Pour over the top of the frozen potatoes. Cover with foil and refrigerate 2 hours or overnight.

4. Bake covered in foil in oven heated to 350ºF for 90 minutes. Let rest for 10 minutes before serving.
