Cherry Rhubarb Crisp Recipe

3 c. cherries, pitted
2 c. rhubarb, chopped
1 tbsp. cornstarch
1 c. old fashioned oats
2 tbsp. all purpose flour
½ c brown sugar
¼ tsp. cinnamon
¼ tsp. salt
4 tbsp. butter
1 tbsp. honey

I also added grated ginger, lemon rind and ¼ c. flax seed

Directions:

Preheat oven to 350º.
Coat an 8 X 8" baking dish with cooking spray or parchment paper.
In medium bowl, combine cherries, rhubarb, and corn starch, ginger, lemon rind, and some honey if desired.
Stir until well coated.
In separate medium bowl, combine oats, flour, brown sugar, cinnamon, milled flax seed and salt. Stir well. Drop the pieces over butter over the oat mixture. Use you hands or pastry blender to combine.
Mix until crumbly.
Drizzle in the honey, and sitr.
Pour cherries and rhubarb into baking dish. Top with oatmeal crisp mixture.
Bake for 30-35 minutes or until fruit is soft and crisp is bubbly.
