cooking spray
1 1/2 c chopped ham
a c shredded sharp cheddar (or other cheese - anything works)
1/2 c Bisquick (or other biscuit mix)
1 c milk
2 large eggs
1 c frozen veggies, thawed and cooked a little (optional)

Directions:
Directions:
Preheat oven to 400.

Mist a 9" glass pie pan with cooking spray. Sprinkle the ham, cheese, and veggies (if using) over the bottom of the pan.

Whisk together the biscuit mix, milk and eggs in a small bowl then pour over the ham and cheese.

Bake the pie until it is golden brown and firm to the touch - 20 - 25 minutes. Remove the pie from the oven and let it cool for 5 minutes. Cut into 6 wedges and serve.
