8 Slices White Bread (crust removed) Cut in 1/2
2 Large Eggs beaten
1 Cup Flour
1/2 lb Fresh Mozzarella
1/2 Cup Canola Oil or more
12 oz or more of a Good Jar Marinara Sauce (Lidia’s,Emerils, Rachael Ray etc) or homemade*

Medium size shallow bowl
Pie pan
Fry pan
Tongs
Paper towels
Serving Plate

Pour oil in Fry pan, depending on size, oil should be a little more than 1/4” deep, add flour to pie pan and beaten eggs to shallow bowl, cut mozzarella so that it’s almost the size of the bread, make a sandwich, press together, when all sandwiches are ready, heat the oil over medium heat, press sandwich into flour, coating both sides, if your oil is hot, now you can dip floured sandwich into beaten egg (very messy) and directly into fry pan, sandwich will puff up, when one side is golden turn with tongs, and continue cooking, remove from oil and drain on paper towels, continue until all sandwiches are made, serve immediately with marinara sauce.
