TACO “MEAT “
1 medium head cauliflower
2 c. walnuts
8 oz cremini (aka baby Bella) mushrooms
1 small yellow onion
1 tsp extra light olive oil
¼ c. taco seasoning (see below)

TACO SEASONING
1 T. mild chili powder
1½ tsp ground cumin
1 tsp kosher salt
½ tsp ground black pepper
½ tsp smoked paprika
¼ tsp dried oregano
¼ tsp garlic powder
¼ tsp onion powder
⅛ tsp red pepper flakes

Directions:
1. Preheat oven to 425º F.
2. Meanwhile, in the bowl of a food processor fitted with the blade attachment, work in batches, adding half of the cauliflower florets and pulse until coarse crumbles form. Then transfer the cauliflower to a rimmed metal baking sheet and repeat.
3. Repeat the same process with the mushrooms,walnuts, and yellow onion. Then pulse a few times until fine crumbs form. Transfer to the pan with the cauliflower.
4. Drizzle with 1 tsp extra light olive oil and season with ¼ c. taco seasoning. Stir to combine.
5. Divide the mixture among two rimmed baking sheets and roast both on the lower two racks of your preheated oven for 10 minutes. Remove,stir, and spread the mixture evenly. Swap and rotate the pans before continuing to roast for another 15 minutes.
6. Load up soft taco shells with the filling. Top with charred corn, black beans, white onion, tomato, cilantro, feta cheese, guacamole, crema, lime juice.
7. This recipe makes a lot of filling, so there should be leftover filling to freeze and use later.
