1/2 cup butter or margarine
2 egg yolks
1 tbs lemon juice
1/4 tsp salt
Dash of pepper

Directions:
Directions:
1. For sauce, divide butter into 3 parts. Place 1 piece in the top of a small round-bottomed double boiler with the egg yolks and lemon juice. Place over hot, but not boiling, water and stir constantly until the butter melts.
2. Add the second piece of butter and continue to stir, then add remaining piece and stir until smooth and thickened.
3. Add salt and red pepper and serve at once - if mixture separates, add 2 tbsp cream or boiling water, drop by drop, stirring constantly. This makes about 2/3 cup of sauce.
