Fruit Salad Dressing Recipe

Juice of 1 lemon
1/2 cup pineapple-syrup
1 tbsp cornstarch
Pinch of salt
1 egg yolk, 1 egg white - separated
1/4 cup sugar

Directions:
Directions:
1. In the top of the double boiler, put the lemon juice, pineapple juice, cornstarch and salt and mix well.
2. Cook over hot water, stirring all the time until it thickens. Cook 5 minutes longer.
3. Mix egg yolk and sugar, and add hot mixture
4. Cook 3 minutes longer
5. Beat egg white stiff and fold into hot mixture. Cool by replacing the hot water in the lower part of the double boiler with cold water.
6. Place in the refrigerator to chill.

Variation – 1/2 cup of whipped cream may be used in place of the egg white – fold whipped cream in just before serving.
