3 lbs chicken breasts
2 eggs
Approx. 1/2 C parmesan cheese
a few slices of mozzarella cheese
1 1/2 C bread crumbs (seasoned with s & p)
Marinara Sauce
1/8 C olive oil for frying
salt and pepper















Directions:
Directions:
Scramble eggs with salt, pepper, grated parmesan cheese
and a few drops of water. Coat each breast with egg mixture
then bread crumbs and fry until each side turns golden brown.
Layer each piece with Marinara sauce between them in a 9x13
baking pan. Top layer with sauce and Mozzarella. Cover with
foil and bake at 350º oven for 1/2 hr. Remove cover for 1/2 hr
more.
