2 medium over-ripe bananas
1/2 cup brown sugar
1/3 cup margarine/butter/shortening
1 egg
1 tsp vanilla
1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/4 cup water
1/2 cup walnuts
1/2 cup sugar
1 tsp cinnamon

Directions:
Directions:
1. Mash bananas a little and then add brown sugar, margarine/butter/shortening, egg and vanilla and beat until mixed.
2. Separately, mix flour, baking powder, baking soda, salt and barely mix in.
3. Add water and nuts and stir just enough to blend. DO NOT OVER STIR.
4. Next, spoon the mixture into 12, 2 1/2 inch muffin tins, either buttered or inserted with liners.
5. Fill muffin tins nearly to brim. Mix sugar and cinnamon and sprinkle on top.
6. Bake at Bake 350 F for approx. 25 mins – yields 12.
