2 cups sifted flour
3 tsp baking powder
2-4 tbsp sugar
1 tsp salt
1/3 cup shortening
1 egg, beaten
1 1/4 cups milk

Directions:
Directions:
1. Sift flour once, measure, add baking powder salt and sugar and sift into a mixing bowl.
2. Add shortening and cut into the mixture until it resembles fine meal.
3. Combine egg and milk and stir into dry ingredients only until moistened, but not until the batter is smooth – mix as LITTLE as possible.
4. Fill lined or greased muffin pans not more than 2/3 full of batter and bake at 425 F for 15-20 mins – this will make about 12 medium muffins.

Variations:
I. Blueberry Muffins – Add 4 tbsp sugar to batter and fold in 1 cup of well drained blueberries.
II. Date muffins – Add 1 cup pitted , sliced dates to batter.
III. Nut muffins – Add 1/2 cup chopped nuts to batter.
IV. Spice muffins – Add 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/8 tsp cloves to flour before sifting with dry ingredients; sprinkle tops of muffins with sugar before baking.
V. Jelly muffins – Fill muffin pans 1/3 full of batter, add 1 tsp any tart jelly, then top with equal amount of batter.
