1 3/4 cups sifted flour
2 tsp baking powder
1/4 tsp soda
1/2 tsp salt
1/3 cup shortening
2/3 cup sugar
2 eggs, well beaten
1 cup mashed ripe bananas (2-3)

Directions:
Directions:
1. Sift flour once, add baking powder, soda and salt and sift again.
2. Cream shortening with sugar until the mixture is light and fluffy. Add eggs and beat well.
3. Add flour mixture alternately with banana, a small amount at a time, beating after each addition until smooth.
4. Turn into a well-greased bread pan about 9 x 5 inches and bake in a 350 F oven for about 1 hour, or until done.

Variation: Add 3/4 cup of chopped nuts to batter, if desired.
