1 good cup flour
1 tsp salt
2 eggs
1 1/4 cups milk

Directions:

1. Mix well the flour, salt, eggs and milk – let stand.
2. When ready to bake, put a little margarine/oil in each muffin pan and melt/warm in 400 F oven.
3. Remove hot pan, and pour in batter. Bake for about 25 mins at 400 F.

Also known as Yorkshire puddings, Betty’s popovers were a hit with everyone, and even today with her great-grandchildren! Since there are so many different particulars and methods, here is the first of two popover versions Betty used. She always called them popovers.
