1 cup warm water
1 tsp instant yeast (if you do not have instant, then use 2 tsp of the more common dry active yeast)
1 tsp sugar
2 cups all-purpose flour
1 tsp salt

Directions:
1. In a bowl, combine the water, yeast and sugar. Let stand until the mixture foams on top, about 5 minutes.
2. In a food processor, use the plastic blade or dough hook, and combine the flour and salt at a medium speed and gradually add the yeast mixture until a soft ball forms. (If you do not have a food processor, make a well in the flour and salt and pour the liquids into the centre – work with your fingers, gradually adding dry ingredients to the liquids until you have a soft dough that can rise in a warm spot.)
3. Remove the dough from the bowl and knead for a few minutes on a floured surface to prevent sticking.
4. Place in a lightly oiled bowl and cover with a clean tea-towel. Let dough rise for 30 minutes in a warm and draft-free area. Cut dough in half.
5. Use the dough immediately or refrigerate (if less than 48 hours) otherwise place it in an airtight bag and freeze. Freezes well!
6. This recipe will make two 23 cm or 9 inch thin-crust pizzas or two 20 cm or 8 inch thicker crust pizzas. Bake pizzas on baking sheet at 400 F for about 15-20 minutes.
