Whipped Shortbread Recipe

2 cups butter, softened
1 cup icing sugar
1/2 cup corn starch
3 1/2 cups flour
1/4 tsp salt
1 tsp vanilla

Directions:
Directions:
1. Beat all ingredients together, butter will have to be soft.
2. Roll into balls and put 1/2 drained maraschino cherry on top, or use a fork to press down. (I use a cookie scoop to form the balls, and then round them in my hands – often I make a thumbprint and insert jam for the topping.)
3. Or, roll into a 3/4 inch thick square and cut into fingers, pricking with a fork all over (Grandma always did this!).

“This is a little difficult to handle when soft but flour the board and your hands while working with it. If you put the cookie sheet with the shortbread on it into the fridge for about 2 hrs they will not spread when baking. GOOD LUCK!” - Grandma
