2 egg whites
1 1/2 cups sugar
1 tbsp white corn syrup or lemon juice
5 tbsp water
1/8 tsp salt
1 tsp vanilla or other desired flavouring

Directions:
Directions:
1. Combine all ingredients, except vanilla, in top part of double boiler and blend well.
2. Place over boiling water and beat with a rotary beater until the frosting will hold in the beater or will hold in soft peaks.
3. Remove from the heat, add vanilla and beat until the right consistency to spread. This will make enough for the top, sides, and between layers of an 8-9 inch, 2 layer cake.

Variations:
1. Sea Foam – Use brown sugar in place of granulated sugar in above recipe.
2. Chocolate – Cool frosting, then carefully fold in 2 squares of unsweetened chocolate which have been melted and cooled. If either frosting or chocolate are warm, mixture will lose volume.
3. Marshmallow – Add 6-8 marshmallows, cut in quarters, to the finished frosting and continue to beat until blended.
4. Maraschino – Use maraschino cherry juice in place of water in above recipe, tint with a few drops of red food color mixture, add 1/4 tsp almond extract and 1/4 cup finely chopped cherries, well drained.
