For cake:
1 cup sifted cake flour
1 tsp baking powder
1/4 tsp salt
2 eggs
1 cup sugar
2 tbsp butter/margarine
1/2 cup milk, scalded
(scalding milk is nothing more than heating milk up to just under the boiling point)
1 tsp vanilla

For topping:
1/2 cup brown sugar, firmly packed
4 tbsp butter or margarine
3 tbsp cream or evaporated milk
1 cup shredded coconut or chopped nuts

Directions:
Directions:
1. Sift flour once, measure and sift twice with the baking powder and salt.
2. Beat eggs with a rotary beater until very light. Add sugar gradually and continue to beat until thick and lemon coloured.
3. Fold dry ingredients into egg mixture, gently but thoroughly.
4. Combine butter with scalded milk and vanilla and add to batter, stirring until blended.
5. Pour into a greased 9 x 9 x 2 inch pan and bake in a 350 F oven about 25 minutes or until done. Remove from oven, cool for 5 minutes, then spread with topping, as follows.
6. For topping, combine sugar, butter and cream and cook over low heat until butter and sugar are melted. Remove from heat, add coconut or nuts and spread on top of the cake. Place 2 inches under broiler heat and brown lightly, about 5 minutes. Remove from the broiler and serve warm or cold.
