2 cups sifted cake flour
2 1/2 tsp baking powder
3/4 tsp salt
1 cup sugar
1/2 cup vegetable shortening
3/4 cup milk
5 egg yolks, unbeaten
1 tsp vanilla
1/2 tsp lemon or orange extract

Directions:
Directions:
1. Sift flour once, measure and resift twice with the baking powder, salt and sugar, into a mixing bowl.
2. Add shortening, half the milk, the egg yolks and flavoring. Mix until the flour is dampened, and then beat 100 strokes or 1 minute on slow speed of an electric mixer.
3. Add the remaining milk, blend and beat for 200 strokes, or for 2 minutes with electric mixer.
4. Turn into a greased 9 x 5 x 3 inch loaf pan and bake at 350 F oven about 45 minutes to 1 hour, or until a cake tester inserted in the center comes out clean. Cool and frost with any desired frosting.
