2/3 cup flour
1/8 tsp salt
4 eggs
2/3 cups sugar (fruit or fine granulated)
1/2 tbsp lemon juice
Grated rind of 1/3 lemon

Directions:
Directions:
1. Prepare pans, rinse in cold water, do not grease.
2. Sift sugar to remove lumps.
3. Sift the flour once before measuring and do not pack in cup.
4. Separate the eggs, taking care not to get any yolk in the white portion.
5. Beat the yolks until lemon-coloured and thick.
6. Beat the whites until stiff but not dry.
7. Add the sifted sugar slowly to the yolk mixture while beating.
8. Then add the flavouring and fold in half of the beaten whites very carefully.
9. Cut and fold the flour into the mixture; then fold in the remaining whites.
10. Turn the mixture carefully into a pan used only for cakes without fat. Wet pan with cold water or sprinkle with flour.
11. A pan with a hollow centre is advisable, so that the heat may penetrate to all parts of the mixture evenly.
12. Bake at 320 F for 1 hour.
