Base for single-crust pie:
1 cup pastry flour
1/4-1/2 tsp salt
1/3 cup fat
Cold water

1. Have all materials cold as possible – pastry flour should be used.
2. Sift dry ingredients.
3. Cut in fat with two knives, or use a pastry blender.
4. Using a knife, mix in just enough water to make a stiff dough.
5. Chill in fridge for 30 minutes before rolling out, then chill before pouring in mixture and baking.

For filling:
2, 1 oz squares, unsweetened chocolate
1/4 cup butter or margarine
1 cup honey or dark corn syrup
3 large eggs
3/4 cup brown sugar, packed
1 1/2 teaspoons vanilla
1/4 tsp salt
1 cup chopped walnuts

For mocha cream topping:
1 cup whipping cream
2 tsp powdered instant coffee
1 tbsp granulated sugar

1. Trim edge of pastry about 1/2 inch wider than rim of 9 inch pie plate. Fold under flute.
2. Melt chocolate with butter over hot water. Stir in honey of syrup; remove from heat.
3. Beat eggs with brown sugar, vanilla and slat just until well blended. 4. Stir in chocolate mixture and walnuts. Pour in pie shell.
4. Bake below oven centre in moderate oven 350 F for 45 mins. Just until barely set in centre.
5. Cool before cutting.
6. Serve plain or topped with mocha cream: beat together whipping cream, powdered instant coffee and sugar until stiff - makes 8 servings.
