2 Garlic cloves, diced small
2 tablespoonsChopped fresh rosemary
1 tablespoon grated lemon zest, or lemon juice
1 teaspoon black pepper
2 tablespoons olive oil
1 cup red wine

1 2-pound London broil
2 tablespoons butter

Marinade: Chop the garlic, rosemary and lemon zest all together to release the flavors and add to a large Ziploc bag. Then add the pepper, oil, wine and mix all together..
Remove the meat from the refrigerator and score the top and bottom with a knife by cutting annex into that me about 1/8 inch thick. Place the meat into the bag of marinade. The flavor is best if allowed to marinate overnight but minimum would be 15 minutes. Be sure to turn the bag over halfway through the time you have to marinate it.
Meat: Preheat the grill to high heat, remove the meat from the marinade and place it on the grill. For medium rare, the meet will take approximately five minutes per side for a one and a half inch thick London broil.
Sauce (optional but delicious): Meanwhile, strain the marinade discard Everything except the liquid. Place in a skillet over high heat and reduce by about 1/3. Once reduced, turn off heat and add the butter, stir until melted.

When the meat is cooked let it rest at least five minutes, thinly slice meat on an angle and serve with the sauce.
